This is my favorite hotdish (I grew up in Duluth). I would get very excited when my mother made this. I have also made this in a crock pot. I turns out almost as well, but no crispy potatoes on the top. |
| Ingredients: |
(this is all subjective).
1 lb. hamburger, 1 can Cambell's
chicken gumbo soup, 4 potatoes (cut and sliced),
1/2 onion (chopped)
plus leftovers from the refrigerator, any leftover spaghetti, corn, extra spaghetti sauce, leftover rice, etc |

Heat oven to 350. Layer in a oven proof bowl (casserole), starting with crumbling some hamburger, then a layer of potatoes, then onions, then leftovers, then some soup, then start layering all over again. Pour half of the soup can filled with water and bake for around 1 1/2 to 2 hrs. This recipe serves about 4. It can be expanded for any number of people (a potato for every person and more hamburger). |
